The selection and review of restaurants is based on references from two food and restaurant critics, Guy Delville and Henri Wijnants.

Hotels listed are at least 3 stars each. They do not belong to a chain. Lodgings and guest rooms/bed and breakfast have been evaluated using the same criteria; they have been awarded a minimum of 3 ears of corn (for the provinces of Liège and Namur) or 3 leaves of clover (for Belgian Limburg).

Practical information (the level of satisfaction, address, closing days, infrastructures and services available.) was gathered in 2006, and there may have been a few changes. To avoid disappointment, visitors are advised to contact the establishment they intend to visit in advance.
